I'm doing a research project but I'm a little confused as to where to start. What do you think is considered beauty to the Ancient Greeks?

Look at their art - their idea of beauty will be there.
In the times before long life, good food and effective medicine, beauty was inseparable from health and fertility, for both sexes. The same can be said for the idealisation of form in Ancient Egyptian and Roman Art. Art is the key and that is where you will find your answer.
