Why do people only breed dogs to 'breed standard'?

I would never want dogs to be harmed by novice breeding or unethical treatment and perhaps I've just answered my own question, but what is so great about breed standard? I have heard it is to 'improve the breed' but how is that happening if you are just breeding the exact same qualities more and more. What's the point? You just keep breeding within the confines of the breed and the improvements seem marginal or stunted. The whole purpose of breeding dogs in the first place was to make them right? Now it seems like new dog breeds or breeding out of the standard is heavily looked down upon by the breeding community. People throw around the 'backyard breeder' term or puppy mill and I don't understand it I suppose? If you're doing it properly and not disregarding health concerns for beauty, then isn't that alright? Isn't that what dog breeding is supposed to be? Breeding for certain qualities? I mean who wouldn't want to make new, beautiful healthy dogs even if they were out of standard? I mean, it's nice to conserve a breed but that's been going on for so long you think the breed would be conserved by now haha. Trying for something different seems heretical and I just wanted to know why besides the obvious reasons of health concern. Thank you for answering.
WOW! Thank you so much, so many responses in such a short amount of time! Personally my favorite was Lara, but you were all very informative. I do understand that BYB's and PM's are terrible, they disgust me as well. I know that careful planning, love and genetic testing are of course the only right way to breed a dog! But there are so, so many pure bred dogs now a days. They should definitely stick around but I just would like to see unique HEALTHY species come into the world as well. BYB's and PM's give that aspiration a bad name. But there was trial and error to make the pure-bred dogs we cherish today. Breeding dogs at all is still breeding for someone's opinion of beauty and usefulness or likability. The standards are there for a reason and knowing what you're getting before hand is great, but I don't see that many people buying a German Shepard to actually go herding. The most I see of them are pets, breeding dogs and show dogs.
It's great if dogs work but you can want a companion even if you don't work on a farm or hunt.
Also when I said 'conserve' the breed and 'better the breed' these are terms I've heard about why breeders breed to standard. To keep the same qualities, or improve qualities line after line and eliminating health problems, etc. The only reason why dogs 'look and act the way they are supposed to' is because someone bred them to be that way in the first place.

Breeds were created to serve a purpose and a standard describes the ideal dog for a breed, for and breeders should replicate or as near to conform to in the dogs they produce to reach that standard.

A breeder can better the dogs they produce and better the breed as a whole by the quality of dogs available to purchasers. By raising the bar they breed to, not cherry picking the bits of the standard they like and tossing other aspects out of the window as irrelevancies, the dogs would be bred to be fits for what purpose a breed was created for, which includes mental and physical soundness and health testing.

Using the Doberman as an example the majority of dogs are bred specifically for the pet market to be pets, with working kennels few and far between. To appeal to consumers that want a dog that is less demanding of them as an owner but still looks the part, less confident and soft temperament are not uncommon, with weakened in strength abilities and characteristics.

Many breeders of Dobermans call it a job done when a dog or b*tch is titled in conformation, which is a nominal test of temperament, with the working abilities of the dog untested and common practice for those that title their stock in dog sport to describe it as âworkâ. A show Doberman may look beautiful, but reducing a breed to a shell of what it should be is breeding against the standard and unethical.

Puppy farms and recidivist back yard breeders do not have the requisite knowledge to choose a compatible breeding pair using bloodline and health test results that were proven breed worthy against the standard, and do not pay out on anything that would bite into their profit margin on each puppy sold, so forget health testing, veterinary checkups during and post pregnancy, decent diet and shelter.

Some breeds fair better than others in the number of breeders producing dogs with the potential to be sold to work available to dogs produced specifically to be pets, but the shift is towards the breeding of pet dogs being greater in number, with cherry picking the bits of the standard a breeder likes and disregarding the rest not uncommon.
